Oven Baked Sandwiches Corn Casserole & Crisp Tortillas Cheese Topping

Leftovers are always so useful and unusual on thing to do and prepare a delicious quickly dish; Either make your leftovers the next day and transform in a new meal, or freeze them.I use for this dish my pasta sauce and other leftovers that I had in the fridge,like bread,vegetables,olive,sun dry tomatoes,sweet corn. And a few tortilla chips, grated cheese things up no end.

For the sandwiches I made a good filling with a combination of vegetables wich i had over ans also chicken, olives, corn, dried tomatoes, cheese and some tortillas with extra cheese ,,, very delicious !!



I use leftovers from

  • Preheat the oven to 180c
  • Bread (enough to give your casserole 2 layers
  • Pastasauce
  • zucchini (thinly sliced)
  • 400ml of milk
  • Dried tomato (cut into pieces)
  • Olives (I used black olives)
  • Handful of parsley
  • Corn (can)
  • Broken tortilla crackers (1 pak)
  • Feta cheese
  • Parmesan cheese
  • Garlic (to taste)
  • salt and pepper (to taste)


Making the casserole filling

First layer:
Put bread in the bottom of the oven dish
Pour milk over the bread then a portion of tomato sauce, corn, olives, dried tomatoes and parsley

Second layer:
Make the same layer over the other (milk, tomato sauce, corn, olives, dried tomatoes, parsley

Top layer

In a bowl, mix the sliced ​​bread, courgette, feta cheese, parmesan cheese and sprinkle over the oven dish.

Finally sprinkle the remaining grated parmesan cheese, feta cheese, corn, parsley, broken tortillas crackres on top of the dish and bring in the oven at 180 ° C and Bake for about 25 – 30 minutes or until cheese is bubbly.
