Salmon bread pudding

I have today a no food-waste recipe.To reduce the amount of food that ends up in the bin and resulting in a new recipe.That gives you a good feeling by creating someting new. A quick recipe with leftovers, fish, some eggs and a layer of mayonnaise; from my early years of cooking. Super easy and you can add more ingredients to transform in your own way. Make a fresh salad and will be perfect with this dish.

Preheated oven 180 ° c
1 small pan lined with butter and flour

Smoked salmon leftovers
2 egg yolks and separate egg whites
2 small breads
A little fresh dille (chopped)
Parsley (chopped)
Spring onions (chopped)
1 small chopped onion
3 tablespoons mayonnaise
150 grams of grated cheese
1 cup of milk
250 ml cream


In a large bowl put all the ingredients with the egg yolks, mixing well. Add milk, mix and set aside.



IMG_20180429_164731 (1)Put the mixture in the lined pan and bake for about 10 minutes. Meanwhile, prepare the egg white layer with the mayonnaise.

Beat the egg whites until firm. Reduce the speed and gradually add the 3 tablespoons of mayonnaise one by one. The cream would look very thin.


Remove the small pan from the oven and spread the mayonnaise mixture over. Bake for another 15min. The mixture will increase in size and will be ready,Enjoy!
