Mozzarella spinach muffin with mayonnaise cheese topping

Delicious muffins with a topping of mayonnaise and cheese gives that different taste from the ones you’ve tasted. It’s a great snack made with the ingredients you have at home. The recipe is super easy and of course like any recipe we make with some modifications. This week I used mayonnaise, eggs and cheese as a topping. They are leftovers I find in the refrigerator using other methods, creating a new recipe,




Preheated oven 180 °

Parchment paper

150 g chopped salami

2 cups spinach leaves drained and squeezed dry

120 wheat flour

130g whole wheat flour

4 eggs 2 teaspoons

baking soda

150 g grated cheese (light)

1cup Greek Natural Yogurt

5 tablespoons mayonnaise

255gr of mini mozzarella

Basil chopped

Fresh parsley leaves chopped Cherry Tomatoes

  1. Chop the spinach,cherry tomatoes,basil,parsley,mozzarella,salami and set aside.
  2. Place eggs, Greek yogurt, grated cheese, flour, baking soda in a bowl.
  3. chop the mozzarella, salami, basil,parsley and add the liquid mixture and mix wel,




Slowly stir in the flour mixture to form a batter.


For the topping

3 white eggs , mayonnaise and grated cheese

Beat the egg whites until firm. Gradually add mayonnaise until cream is created. mix together with the rest of the muffin dough, add salt and pepper and set aside.

Press the parchment square into the greased tin by using a glass.Remove the glass en fill liners with the muffin batter en the chopped mozzarella as last step by pressing a bit in the cupcakes Spoon about 2 tablespoons into each muffin cup

Bake in a preheated oven without the mayonnaise topping at 180ºC for about 15min.

Remove the muffins from the oven en spoon the mayonnaise mixture and sprinkle about 1 teaspoon of grated cheese into the muffins en bring back for 10 more min until inserted a toothpick dry
