Today I introduce the combination of soya bean meat, dried mushrooms in strips with a tapioca flour and Parmigiano cheese topping to give that layer without using too much melted cheese.
That’s why I always use tapioca or cassava flour to replace the large amount of cheeses used to melt. In this way you do not lose the flavor by using less cheese and it is a new idea as topping for your dish for in the oven.
Sweet potato is rich in carbohydrates and offers vitamins, minerals, fibers with many beneficial for the body. Let’s start with this new idea to inspire you.
Ingredients
Preheat oven 180°c
2 sweet potatoes
2 different types of vegan soy meat (a little, enough for two potatoes)
A bit of mushrooms in dry strips (enough for two potatoes)
1 onion cut into cubes
1 or 2 garlic
2 carrots (chopped)
Half garlic
parsley
200gr of feta cheese
1 tablespoon concentrated tomato flesh
1 tablespoon vegetable seasoning
4 tablespoons tapioca flour
150gr of parmifiano cheese
First we start with the potatoes, washing well and cutting into two parts. There are many methods of cooking the potatoes. I chose a quick method to not waste time in the kitchen, the microwave

With a fork, see if they are soft. If they are not soft, increase the power for another 5 min. It is important that you get the potatoes to make them pure, without leaving them too soft; Once cooked carefully pour the sweet potatoes into the colander and let it cool
Next step are dried soybeans and dried strips mushrooms

While you wait until it absorbs water and is soft * Quickly will be soft and after 5min remove then the excess of water in a colander
Heat a pot and put some coconut oil. Then fry the garlic and the soy meat, mushrooms strips, chopped carrots. Fry well and then put 1 teaspoon of vegetable seasoning, 2 teaspoons of concentrated tomato pulp, taste it and if you want add more.
for topping
4 tablespoons tapioca flour
150gr of parmigiano cheese
-Make a mixture of tapioca flour with grated parmigiano cheese
Instructions for stuffing the sweet potatoes
Using a spoon, remove half the crumbs from the potatoes and mix with the meat sauce in the fry pan with pieces of feta cheese and thens poon the mixture into potato halves.Top the tapioca flour with parmigiano cheese and bake for 25 minutes until golden brown.
