Pancakes are delicious, We live more aware about the value of our health and so I recommend today a healthier and more suitable pie for the oven
Let’s start with our pancake.
2 cups buckwheat flour (spelled flour)
2 cups of sparkling water
1 egg and a little salt and vegetable oil
To make the pancake
Mix all ingredients and make the pancakes, Heat a pan over a medium heat with vegetable oil and dollop a bit of the mixture on the pan for each pancake.. when done just use a on a lid or foil to keep warm and soft
Ingredients for the filling and sauce
2 zucchini (sliced)
400 gr spinach
200 g of parmigiano reggiano cheese (grated)
To make the sauce
Bring the zucchini to the oven 180°c for 10 min and remove from the oven for later
In a pan fry the garlic and onion, then add the oregano, basil. Afterwards add the milk and spinach 300 g (the rest leave to finalize the pie) After the spinach has cooked add the reggiano parmigiano cheese until you get a sauce not allowing to get thick.
Moist the bottom and up the sides of the pie plate with oil, Then first one pancake,zucchini, then the sauce and so on. Bake for 25 min and finish adding more grated cheese,,Enjoy!!!
